If you don't want your competitors to see your prices, or you want to be able to change prices at a later date, you can hide them on the plan.

You will find the Hide booth prices checkbox in Settings  - Floor plan.

After you check this box, booth prices will be invisible on the live plan, but you will still be able to see them on your backend.
